How To Make This Freezer Quiche Make-Ahead Breakfast or Brunch

  1. Prepare pie crust according to package directions, place in a 9 inch pie dish, and set aside.
  2. In a large bowl, scramble together the eggs, milk, salt and pepper. Add the spinach and bell pepper and stir again.
  3. Pour the egg mixture into the pie crust. Top with gruyere cheese and thyme.
  4. If cooking now, bake the quiche in a pre-heated oven at 400 degrees Fahrenheit for 30 minutes, or until the top of the quiche and the edges of the crust are golden brown.
  5. If freezing, carefully wrap the uncooked quiche in a layer of plastic wrap first. Then wrap in aluminum foil. Freeze for up to 6 months. To cook from frozen: preheat the oven to 375 degrees Fahrenheit. Remove the foil and plastic wrap, and cook frozen quiche for 60 to 75 minutes (mine took 75 minutes) until hot and bubbling.

Equipment for Quiche

  • There are a few basics – a pie tin for baking and a medium bowl for mixing. Here are some other pieces of equipment you could use.
  • Baking Sheet – for baking the pie dish on. I recommend a baking sheet if you are using a store-bought pastry crust that is in a aluminum tin. The baking sheet will catch any overflow from the quiche.
  • Aluminum Foil – if you are freezing the quiche for later.
  • Airtight container – for storing leftovers.

FAQs

Can I make quiche ahead of time and reheat? ›

To make quiche ahead of time, bake it as instructed and let it completely cool. Store it in the refrigerator for up to three days. To reheat, cover it with foil and bake at 325 degrees for about 15 minutes, until just heated through.

What not to put in quiche? ›

Avoid Fillings That Are Too Wet

"Some vegetables, such as sliced large tomatoes or raw zucchini, have a high water content and will make your quiche soggy (even if you follow all steps to avoid this!)," Davila notes.

Can I Prebake a quiche crust the night before? ›

Editor: Yes, I recommend pre-baking the crusts for quiches because I think it helps keep them from getting soggy from the filling.

How do you reheat quiche without drying it out? ›

Take your quiche out of the refrigerator and allow it to come to room temperature. This helps ensure the quiche reheats nice and evenly. Place your quiche on a baking sheet and cover the crust with aluminum foil. Warm the quiche in the oven for about 15 minutes, depending on the strength of your oven.

Is it better to freeze quiche, cooked or uncooked? ›

A small amount of “weeping” (separation that causes moisture to pool in the pan) can make the crust a little soggy as well. That said, freezing a baked quiche has a few advantages: It's easier to do than freezing an unbaked one, and will heat up substantially quicker when you're ready to eat it.

Can you put too many eggs in a quiche? ›

Using too many eggs in the custard results in a quiche that rubbery and too firm when baked, while not using enough will prevent the custard from setting. Follow This Tip: Remember this ratio: 1 large egg to 1/2 cup of dairy.

What can go wrong when making quiche? ›

A quiche is a type of custard and can crack if the ratio of egg yolk to cream is not right (try about 2 whites, four yolks and a little less than 400 ml cream). If you are using light cream then that is also a mistake. A quiche can also crack if you cook it too quickly or in too hot an oven.

Why did my quiche come out watery? ›

If your quiche appears watery it may just need to set for a little longer. The recipe may also contain too much dairy, so make sure that the recipe you are following has the ratio of 4 eggs to 1 cup dairy. The added ingredients could also contain too much moisture, so it is important to cook or drain additions.

Why is the bottom crust of my quiche soggy? ›

If the bottom crust doesn't set before the filling soaks in, it's going to be gummy. A metal pie pan placed on a preheated surface will set the bottom crust quickest; once cooked, the liquids from the filling above won't soak in, and as a result: no soggy bottom.

What is the blind bake method? ›

Blind baking simply refers to baking a pie crust, partially or completely, without any filling in it. Easy enough, right? The only catch is that if you're using pastry dough for your pie (versus a crumb crust), you can't just slide the pie into the oven as-is.

How do you store a prebaked pie crust overnight? ›

You can wrap it in cling film before you put it in the refrigerator, or put it in a sealed box and then in the refrigerator. Avoid contact with air as much as possible. If it's a baked pie, you can also put it in a pre-heated oven for about 15 minutes so that the moisture evaporates and gets flaky again.

How do you make the bottom of a quiche crust crispy? ›

Sprinkle dried breadcrumbs or crushed cornflakes, or other types of cereal, on the bottom crust before filling and baking in the oven.

Why does my quiche sink when I take it out of the oven? ›

Excess moisture is one reason why quiches collapse in a watery pool on your plate. Vegetables and meats like ham give off tremendous amounts of water when they're cooked. Therefore, if you're using vegetables in your quiche, it's imperative that you cook them first.

Do you poke holes in quiche crust? ›

With docking, the holes allow steam to escape, so the crust should stay flat against the baking dish when it isn't held down by pie weights or a filling. Otherwise the crust can puff up, not only impacting appearance but also leaving you with less space for whatever filling you have planned.

How long should you cool quiche before refrigerating? ›

Just be careful to keep it in the fridge as leaving it on the counter could create bacteria growth due to the quiche's dairy and egg-based filling. According to the FDA, you should never leave egg-based dishes out on the counter for over two hours — and if it's especially hot, they should be refrigerated before then.

Can you rebake a quiche that is undercooked? ›

It is okay to rebake undercooked quiche.

Can you reheat cooked quiche twice? ›

If food has been hygienically prepared, cooled quickly after cooking (or reheating) and stored cold, reheating more than once should not increase the risk of illness. But prolonged storage and repeated reheating will affect the taste, texture, and sometimes the nutritional quality of foods.
